Snowflake Minnie Mouse Cupcakes Recipe

Are you thinking of making cupcakes for the holidays?  While I love cookies, I much prefer to make cupcakes, especially for special occasions. As a result,  I have a fun recipe to share for Disney fans who want to make cupcakes instead of cookies for Christmas:  Snowflake Minnie Mouse Cupcakes!

Snowflake Minnie Mouse Cupcakes

I recently shared a recipe for Mickey Mouse Holly Cupcakes.  However, I couldn’t leave Minnie Mouse out 🙂  Keep reading to find out how to make Minnie Mouse Cupcakes with fondant.

Fondant Ears and Bow:  Supplies and Ingredients Needed

  • 1 package of red fondant
  • 1 package of green fondant
  • 1 Wilton Fondant Bow Mold
  • 1 Mini Circle Fondant Cutter
  • 1 Wilton White Piping Gel

Directions

Sprinkle some powder sugar onto a cutting board.
Roll out the red fondant into 1/4 inch thickness and cut out 48 circles of the red fondant for the ears and set aside to dry out overnight.
Powder your hands with powder sugar and mold the green fondant into a ball.
Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold.
Make 22 bows then set aside to dry out overnight.
Next Day: Using the white piping gel, pipe on snowflakes onto the red circles.
Allow to dry for a few hours.

Vanilla Cupcakes:  Makes 22 Cupcakes

Ingredients and Supplies Needed:

  • 1 box of french vanilla cake mix
  • 3 large eggs room temp
  • 1/2 cup of softened unsalted sweet cream butter
  • 1 cup whole milk
  • Christmas cupcake liners
  • Cupcake pan

Vanilla Cupcake Directions

Preheat oven to 350 and line a cupcake pan with the cupcake liners.
In a medium bowl, beat the cake mix, eggs, butter and milk until smooth and combined.
Fill cupcake liners 3/4 of the way full.
Bake in the oven for about 21 minutes.
Pull out the cupcakes and allow to cool before frosting.

Vanilla Frosting Ingredients

  • 1 1/2 C unsalted sweet cream butter, softened
  • 4 1/2 C powdered sugar
  • 5-7 tbsp. heavy whipping cream
  • 2 tsp. pure vanilla extract
  • 1 large piping bag with large star tip
  • 2 containers of Wilton Christmas Sprinkles (Any of your choice)

Directions

Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla and mix on medium speed until combined and smooth.
Scoop the frosting into the piping bag.
Pour the Christmas sprinkles into a medium bowl.

Decorating Directions

Using the piping bag, pipe a thick wall of frosting around the edge of
the cupcakes.
Coat the frosting in the Christmas sprinkles.
Pipe a dollop of frosting into the middle.
Carefully place a green bow in the center of the frosting.
Carefully place two snowflake “ears” on the sides of the bow.
Enjoy!
